My wild and wonderful guests today Malcolm Saunders. Malcolm is the founder and creative visionary of the Light Cellar, a specialty superfood shop, elixir bar, and teaching kitchen based in Calgary Alberta Canada. He is the author of the book Elixir Life: Where Modern Nutrition Meets Ancient Herbal Wisdom – a practical guide to help you craft your own nourishing beverages. In this episode we Malcolm shares his insight on intuitive eating which is a skill he picked up as a Jazz musician. Through his travels and experimentation with varying degrees of plant-based diets, he found healing in the traditional diet of his ancestors and the four food groups that very across culture, Plants, Animals, Bacteria, Fungus; Malcolm discusses how our bodies know when, and how much to eat if we listen to it and that our ancestors’ traditional diet tells us what to eat. He breaks down his food lens which is the SCOPE principle, an acronym that stands for Science, Culture, Opinion, and Personal Experience.
